Making the Perfect Machboos:
Ingredients:
2 cups basmati rice (soaked for 30 minutes)
1 chicken (cut into pieces) or lamb
1 large onion (finely chopped)
4 cloves garlic (minced)
2 tomatoes (chopped)
2 dried black limes (loomi)
1 tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp cinnamon powder
1 tsp black pepper
Salt to taste
1 tbsp baharat spice mix
4 cups water
2 tbsp vegetable oil
Optional garnishes: roasted almonds, raisins, or chopped parsley
Instructions:
In a large pot, heat vegetable oil and brown the meat (chicken or lamb) along with onions, garlic, and chopped tomatoes.
Add the dried black limes (loomi) and spices – turmeric, cumin, coriander, cinnamon, black pepper, and baharat – and mix well.
Pour in enough water to cover the meat, and allow it to simmer until the meat becomes tender and flavorful.
Add the soaked rice to the pot, ensuring it is well mixed with the meat and spices. Allow it to cook and absorb the rich flavors.
Serve the Machboos hot, garnished with roasted almonds, raisins, or pine nuts for extra crunch and sweetness.
